Rain Vodka and Watermelon Hail
This actually a recipe for granita , we have use it as part of a pudding in the restaurant, but I love it re-beaten with an extra shot of vodka or two served as a tipple…
We use organic rain vodka at Terre à Terre but any good vodka will do, citrus flavour is very good but if you feel a bit oooolala try a pepper flavoured vodka and chuck in a few squashed up ripe strawberries, cherries or puree if you have the time.
It is really refreshing as a granita and as a drink can make you fall over if load it up enough! And served with honey cream cheese cardamom fritters makes a great pudding, I will get back to you with that recipe!
1 kg of watermelon without rind and pips
4 tsp of lime juice
¼ c/60g caster sugar
¼ c/60ml vodka
dsp chopped mint
Put seedless watermelon, lime juice and caster sugar into blender and process until smooth. Strain through a fine sieve.
Add the vodka and mint, keep tasting and add more vodka or sugar if needed.
Tip into 1.5 litre freezer proof container, preferably metal and freeze for approximately one hour until edges look a bit frozen.
Drag frozen bits back into mixture with a fork and blend; repeat every 30 minutes until (bored!) even ice crystals have formed.
Serve immediately or smash with a fork just before serving.
