Chow Chow Turnips
Ingredients:
300g white young turnips
10g toasted sesame seeds
100g baby spinach, red chard and other shoots/leaves
1tbs chopped Chinese chives 120g bean sprouts
Marinade:
4tbsp toasted sesame oil
2tbsp tamari
4g mash of young fresh ginger
mixed together and set aside
For the last dressing:
4tbs olive oil
juice of fat lime or yuzu juice
mixed together and set aside
Method:
1. Peel the turnip and slice them into about 40 rounds approximately 1cm thick.
2. Soak in the marinade for 24 hours in fridge covered with cling film or tight lid
3. Cover the bottom of a wide shallow saucepan with sliced turnips; be careful not to stack the rounds. Cover to just passed your knuckle with water/stock bring gently to the boil and cook until the liquid has evaporated and the turnips are tender but not soft.
4. Take of the heat and pour the vinaigrette over the turnips , chill.
5. Toast the sesame seeds in a dry pan.
6. Sort and rinse the leaves. Drain very thoroughly.
7.The presentation Its up to you - I toss the leaves and the last dressing together then at the last minute lay the thin turnip rounds on top of the leaves and dribble any extra dressing juices over the top, then sprinkle the toasted sesame seeds on last thing - bingo - very tasty, very simple and very good with a slug of dry sherry and tempura sushi! |
