Fresh Tomato and Tamarind Chatni
Ingredients
4-5 fat red red skinned, deseeded and chopped tomatoes
1-3 small red chilies, very finely chopped
2-3 garlic cloves, very finely chopped
1 tsp chaat masala
1 tsp chopped fresh coriander
1 dsp tamarind pulp
1 dsp maple syrup
3 tsp oil
1/4 tsp mustard seeds
6-8 curry leaves, shredded
1 tsp cumin seeds
a pinch of asafoetida, if you can get it
Method
1.Put the tomatoes, chilies, garlic, chaat masala and coriander in a glass or metal bowl and mix well, adding salt to taste
2.Heat the oil in a frying pan, when hot add the mustard seeds they will pop then add the curry leaves, cumin and last of all the asofoetida.
4. Throw into the cold chutney it should sizzle.
5. Lastly drizzle in the maples syrup and the tamarind pulp ....ready to eat
serve with nan breads, corn cakes and full fat limey yogurt.
